Coral Trout


The coral trout is one of the most highly regarded table fish on the Great Barrier Reef. Most coral trout caught commercially in Qld are exported live overseas, but all of ours stay right here in Australia.

The colour of the fish depends on the depth of water it was taken from. Green-coloured coral trout are commonly caught in shallow water (less than 10 metres), the red colouration increases as the water depth increases. Because we only fish depths greater than 50m, the trout we catch are always very deep red coloured fish.

There are a few sub species of coral trout – common coral trout, blue spot trout, passionfruit trout, barcheek trout, coronation trout and more.

All have the same eating qualities. The minimum legal size limit is 38cm in Qld. Blue spot coral trout have a minimum size limit of 50cm and a maximum size limit of 80cm.

Depths vary from 1m to 150m but most commonly from 15m-70m.


 

Red Emperor


The red emperor is often referred to as the holy grail of reef fishing and is one of our main target species. The table qualities are up there with coral trout!

The minimum legal size limit is 55cm (approx 3.5kg) in Qld. The average size is 6-8kg but can be up to 15kg.

Depths vary from 1m to 150m but most commonly 45m-90m.


 

Saddletail Snapper


The saddletail snapper is one of my favourite eating fish. The minimum legal size limit is 40cm (approx 1kg). The average size is usually around 4-5kg but can be up to 14kg.

Depths vary from 5m to 150m but most commonly from 40-80m.

Unfortunately this species have been given a pretty ordinary name in the past because they have been trawled or trapped in huge quantities. Well handled, line caught saddletail snapper is one of the best eating fish on the reef in my opinion. Poorly handled fish caught in volume by rather questionable fishing methods have done this species no favours.

This is a particular fish which deteriorates in quality rather rapidly if not handled 100% correctly.


 

Spangled Emperor


The spangled emperor is coloured yellow, blue, grey and white with spots, splashes and stripes. It is a slightly firmer fleshed fish but very tasty.

Minimum legal size is 45cm (approx 1kg). Average size 2kg-3kg and caught in all depths.


Goldband Snapper


The goldband snapper is a very tasty fish with a similar eating quality to red emperor.

The minimum legal size limit is 38cm. (approx 700gms) The average size is 2-3kg but up to 9kg.

Depths from 45-200m.


 

5 Spot or Black Barred Garfish


At up to 220gms each, these garfish are popular, with very good reason. They are a far superior looking fish to any other species of gar, and are quite a bit ‘meatier and chunkier’ than any other species of garfish.
